“I harvest these mushrooms every six hours – four times a day.
Each time I harvest it takes me about two hours for five to ten kilograms,”
Mr.Tom told me proudly. Growing these mushrooms is an around-the-clock operation,
more time-intensive than milking cows.

“The cold season doesn’t produce as many mushrooms as during the summer,
but fewer mushrooms means I can sell them for a higher price. Now it is cold season, and I can sell one kilogram for 100 baht.”
These mushrooms are a money maker, and allows Mr.Tom to provide for his family while working from home.
Mr. Tom is a self-taught mushroom farmer who has been growing mushrooms for over ten years.




He specializes in “Hed Khon Khao,” as it is called in Thai, or Lentinus squarrosulas Mont.  This variety of mushrooms is eaten widely throughout Asia.

This is a homemade pasteurization chamber made from a modified 1000-liter water tank that is heated by fire beneath the tank.




Mr. Tom’s mushroom houses are 4 x 10 meters insulated with two layers of anti-UV plastic sheets and saran shade cloth. He ventilates the house by drawing back the layers to allow better air circulation. He monitors temperatures inside these houses by sense alone without the use of thermometers or sensor equipment.

Last month, Mr.Tom invited me to see him while making Hed Khon Khao Bag.


He hired an 80 years old grandmother to work for him, 200 baths a day.


His pasteurization chamber is working to pasteurize 1,400 substrate bags/two tanks at one time.

The pasteurized substrate bags are waiting to cool down.
They will be inoculated with grain spawn in opened air environment like this.

There is a legend.
Once a mushroom grower could not be patient to wait for the fruiting to come out.
He got angry and slapped the mushroom substrate with his slipper.
Few days latter the fruiting body came out.

Every six hours 4 times a day!!!  Wow!  That really is a lot of times per day, he must just sleep in naps here and there!

Packdee, thanks for sharing the whole operation of this mushroom farm. 

I can't believe they inoculate in open air!

Oh, how does he humidify his grow rooms?  That's the only thing I think is missing from these great photos.

It is about 32-35 degrees C, RH 80-90%.

He uses a hose to spray water like we water flower or vegetable.
Normally he sprays water in the morning and evening.
During cold season the the air is drier so he sprays water more often.
No mister or fogger.

It takes 40 days for an 800 gram substrate bag to be fully colonised.
He slaps the blocks with the first spraying water.
He aims the spraying water to the front of each block.

When we started to use small bag technique we used cotton plug as filter.
Later we found that we can save cotton by using removable cap with smaller cotton filter.
That is synthetic fiber, the waste from blanket factory, not the cotton.
