Victorian Black Morel... Are they edible?

Hi All,

Long time lurker, first time poster. Thanks to everyone for putting up some really great info!

I've been getting into edible mushrooms as a hobby over the last few months (bought some gear, grown some oysters) and have been out exploring the bushland a couple of times to see what I might find. Today, I've found what appears to be a nice patch of Black Morels up in the Victorian high country (see attached).

Now, as I'm a bit new I just grabbed a sample to try and verify that, firstly, these are actually Morels (I'm pretty happy with that bit... but let me know if there's anything that I should be checking...) and secondly if they are edible and worth going back for.

After doing some digging and haven't really been able to find anything definitive to say that the Australian/Victorian varieties of Black Morel are edible. I know there's pics on here of cook-ups and some really enviable hauls... but then I do some digging and Fungimap lists it as 'toxicity unknown'.

The further I look I'm just coming up with more indications that they are edible... but then the sources don't specify if they're talking about a European/American variety or the Australian one.

i'm guessing this is probably just a matter of having the right books (which I don't... yet). Any tips would be appreciated!

I'll tell you if they are edible if you tell me where you found them. :P

Morchella is the only family of fungi without a poisonous member, so these most certainly are edible and delicious.  Try them with earthy veg like brussels sprouts, asparagus or brocolli, maybe some butter and cream.

Well done on taking a picture of a cut specimen, false morels (Gyromitra sp.) are not hollow and are toxic but are rare in Australia.

Dis you find these morels in an area that was burnt this summer?

Awesome! Thanks for getting back to me so quickly! Interestingly, the area hasn't been burnt in a long time (5-10 years I think). I read somewhere there are seasonal varieties too?

Another interesting point (i think) was that I found these in fairly clear areas on a slope, not really close to any trees and also not consistently near any particular type of scrub... I was under the impression they are Mycorrhizal?

I'll give these a run for breakfast then and go see how many others there were  ;D

Definitely not mycorrhizal.  Seasonal varieties may like the protection or nutrients from certain trees.

Could you please PM me a bit of a vague yet not so vague location for these?  I'm not going to raid your spot, I'm just trying to learn more about conditions in which seasonal morels grow.  Tree or shrub species nearby?

Morels are not like other mushrooms, in a strange way despite having flavour they seem to lack flavour, they are almost a natural MSG for other mushrooms and earthy flavours.

Did you find them in an area near granite?

I'm very jealous with your find, so well done! These are hard to find so well done for getting them!

I found the perfect storm of morel country today - messmate eucalypt forest with lots of granite, lots of greenhood native orchards and a recent fire. No morels though :(

Yeah, there was a bit of granite about although it wasn't overly rocky. It wasn't heavily forested either, they seemed to like a bit of sun as I found them in clearings amongst low scrub.

Didn't have time to be overly thorough but I got a few ice-cream tubs full; not bad at all for a random find :)

So now, what to do with them all? I've got a bunch drying on a tray under a fan - any other suggestions for preserving them?

I've managed to score a couple of hundred grams of fresh morels, sadly not ones that I've picked as I don't have time at the minute to head out.  Still, I can't wait to eat them, pretty pumped.
